This seasonal hot sauce is made from 70 kg of Sicilian kumquats, local apples, Habanero peppers, and the finest Deglet Nour dates.


Our seasonal sauces are true demonstrations of our expertise.

A show that is always unique.

It also takes longer than average to manufacture. Much longer.

First, the dates are pitted by hand, and after cooking, they are mixed for a very long time...

Smoothing the sauce; a battle against the zest until a perfectly viscous texture is achieved.

So viscous that it takes 10 seconds to fill each bottle by hand. 

It's taking a long time.

It's the perfect sauce to pair with seafood, raw fish, or to add to salad dressings.


The roots:

The Kumquat prototype was created five years ago, in February 2021, at Rocco Pantalon.

As an aside, that's where Mathieu and I met, a month later.

Rocco Pantalon was our friend Ben's plant shop in the center of Brussels.

That's also where the SWET GIRLS introduced me to their friend Matias, in the spring of 2023.

He was also one of the first two SWET resellers... 

In short, an incredible spot with a magical, plant-filled soul that attracted special people.


Ben had a kumquat plant laden with fruit lying around in his shop. 

We harvested them and I made a sauce with them, along with some Moruga scorpion peppers that were left over from another test. 

It was LAB ROCCO 2, which followed ROCCO 1, the yuzu collaboration we had just done together.

It was much too strong, but it was a remarkable revelation.

Kumquat and chili pepper are a match made in heaven.

Enough that we've already taken it out three times since then, during the season of course, each time a little differently:
