A raw hot sauce, with no sugar, very little salt, very spicy, and a truly indescribable depth of flavour.
A unique sauce, impossible to reproduce exactly.
A lot of people think that fermentation is leaving chillies in a barrel with a ton of salt.
It's rarely interesting, except with oak barrels on an island in Louisiana.
And we don't really see the point of making fake Tabasco.
In fact, we're doing exactly the opposite.
For us, lacto-fermentation is a complex process, a symbiosis between ingredients that metabolize together, slowly transforming themselves thanks to the work of bacteria, to produce a new product with incomparable richness and depth of flavor.
An alchemy that bears no approximation.
Of course, it takes work, time and a lot of vigilance.
Years of work and dozens of tests to find the right combination.
The right conditions and, above all, the right ingredients:
Yellow Habanero peppers harvested in Brussels in the summer of 2024, Chipotle peppers imported directly from Mexico, garlic and red onions, green oak-smoked Pimenton de la Vera peppers, pepper, very little salt and a little good cider vinegar.
To tell the truth, we hesitated a lot before releasing it, because we've only released 270 bottles and we love it too much.
