Amalfi lemon is the one we use in our LEMON HARD, and it's a perfect example of our exacting standards.

Also known as "fusato amalfitano", Amalfi lemons grow exclusively in the spectacular bay surrounding the small Italian town of Amalfi, on the Amalfi Coast. This ancient variety, grown in terraces on steep slopes, is immediately distinguishable by its unique appearance: a thick, wrinkled, bright yellow rind, and an elongated shape, slightly curved and pointed at one end.
But what really makes the Amalfi lemon superior is its incomparable taste and aromatic quality. Unlike ordinary lemons, its pulp is sweeter, less acidic and very juicy, making it a particularly pleasant fruit to eat raw or to incorporate into the most refined recipes of traditional Italian cuisine. The peel, rich in highly perfumed essential oils, is a choice ingredient for confectionery and liqueurs such as limoncello.
This excellence in taste and smell is due to an exceptional terroir: fertile volcanic soil combined with a unique microclimate, where the sea moderates the heat and the mountains protect the crops from cold winds.
This ideal natural setting gives Amalfi lemons characteristics found nowhere else, and it's even said that sometimes when they've just been picked, their skin is slightly salty... We licked a few, but probably too late :))
Amalfi lemons have a Protected Geographical Indication (PGI).
