Made with slow-cooked onions, yellow habaneros from Brussels, olives from the Niçois hinterland, Mediterranean anchovies and a touch of garlic and herbs from the maquis, it's a familiar balance of flavors when you've been around Nice, if you've ever had a craving for pissaladière, bought in extremis in a village bakery and devoured in the shade of a large plane tree, sitting by a fountain, between two hot mountain passes.

Craving after craving until the soul-repairing bivouac.

A piquant bike-packing sauce that bridges the gap between stuff gleaned haphazardly on the side of the road and products carefully compacted at the bottom of the bag to take up as little space as possible, designed for survival, not pleasure.

The result is a transcendent bivouac.

Cycling is pleasure mixed with pain, but strangely enough, it's always the pleasure we remember. Food is often the opposite, because the mind tends to erase everything that surrounds a disappointing plate; the stars that shine, the insects that sing, the smell of the garrigue... it's so easy to spoil a bivouac.
