Circular tartare.

The big banger of our summer, prepared with trout raised on the same urban farm that grows our Brussels peppers.


In fact, it's the water dirtied by the trout that feeds the plants, so it'll be hard to make it more circular!


Of course, you can prepare it with salmon, but frankly, most commercial salmon is poison. Responsibly farmed trout is a thousand times better.


Ingredients:


  • 300 g trout fillet
  • 1 lawyer
  • A little fresh coriander
  • 1 tbsp sesame oil
  • 2 tbsp. soy sauce
  • 3 tbsp. Sunburn or Lemon hard hot sauce
  • Sesame seeds



Preparation:


  1. Combine the trout and diced avocado, coriander, sesame oil, soy sauce and hot sauce.
  2. Sprinkle with sesame seeds before serving.
